Gold Coin Pancakes with Sweet Beer Syrup

Pancakes
Ingredients:

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 egg
  • 3 tablespoons butter, melted

Method:

  1. In a large bowl, sift together the flour, baking powder, salt and sugar.
  2. Make a well in the center and pour in milk, eggs and melted butter, mix until smooth.
  3. Heat a lightly oiled griddle or frying pan over medium high heat
  4. Pour or scoop the batter onto the griddle, using approximately 1 tablespoon for each pancake
  5. Brown on both sides

 

Sweet Beer Syrup
Ingredients:

  • 2 ½ cups white sugar
  • ¼  cup Guinness or other beer
  • ¾ cup water
  • ½ teaspoon maple flavored extract

Method:

  1. In a saucepan, combine sugar and beer
  2. Cook and stir until sugar is dissolved
  3. Remove from heat and stir in maple flavoring
  4. Serve warm

Sprinkle edible gold dust on the pancakes to give them the gold simmer like a gold coin.
