One of my absolute favorite one-pot meals is french-style cassoulet. It is both rich in texture and satisfying to the palette. The only downside to true french cassoulet is the time needed to create this traditional meal – it can take up to two days to finish!
I don’t have that kind of time and I’m sure you don’t either. For this reason, I parred down a few of the expensive ingredients and snuck in a few additions of my own. My new take on cassoulet will take only three short hours.
Simple Chic French Cassoulet
(serves 4)
16 oz. white beans (soaked overnight and washed)
4 chicken thighs (sautéed skin side down
4 duck sausages (or hot dogs)
Three sprigs of fresh herbs (thyme, rosemary, tarragon)
4 strips of fried bacon
One small onion (finely chopped)
3 whole cloves of garlic
6 cups of chicken stock
salt & pepper to taste
