  • Vegitarian Carrot and Goat Cheese Sandwich Spread

Spreadable vegetarian carrot & goat cheese sandwich to serve on toast points, pita chips or crackers.  Ideal for an alfresco cocktail party or to take with you on a picnic to safeguard against crushed picnic sandwiches!

Ingredients

  • 2 cups grated carrots
  • 1 cup green olives, finely chopped
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1 teaspoon finely grated fresh lemon zest
  • 1/2 teaspoon black pepper
  • 1/4 teaspoons sweet paprika
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 1 Tablespoon olive oil
  • 8 ounces soft mild goat cheese at room temperature

Tools & Materials

1-quart glass mixing bowl (for molding)

Directions

  • Combine all of the ingredients except goat cheese in a bowl and toss until thoroughly mixed.  Fold in goat cheese until the mixture is evenly distributed in the cheese.

  • Spray the glass mixing bowl  with cooking spray and line with plastic wrap. Fill mold, cover and refrigerated for 8 hours or until use.

    Unmold and serve with toast points.
