Cocktail
Pour lemon juice, and thyme-infused syrup and gin into a shaker, a generous amount of ice, and a pinch of fleur de sel. Shake vigorously, and then strain into an ice-filled glass. Top with ginger ale, and garnish with cucumber slices and fresh thyme sprigs.
For thyme-infused syrup
Bring sugar & water to a boil in a small saucepan. Remove from heat, add sprigs of thyme, and let steep for 15 minutes. Strain.
