This flavorful citrusy rice pairs perfectly with Yucatan Pollo Pibil or Slow Braised Beef Jalisco-Style for delicious Mexican tacos.


1 c. long-grain white rice
coarse salt
1 tbsp. butter
1/2 c .fresh cilantro
2 tbsps. fresh lime juice
2 c. of water
1 tbsp. olive oil
2 tbsps. of water
1 garlic clove

  • 1. Rub your slow cooker lightly with 1 tablespoon butter or margarine.

    2. Pour in rice, 2 cups of water and salt.

    3. Cover and cook on High 1 1/2 to 2 1/2 hours, stirring occasionally.

    4. Meanwhile, in a blender, combine cilantro, lime juice, oil, garlic, and 2 tablespoons water; blend until smooth. Stir into cooked rice, and fluff with a fork.
